Protein-Packed Taco Scramble

Tired of boring scrambled eggs? This taco scramble packs 32 grams of protein, comes together fast with meal-prepped ground beef, and gets a scoop of pico that makes it feel like tacos for breakfast. It’s basically a fiesta in a skillet.

INGREDIENTS:

  • 2 eggs
  • 1/4 cup egg whites
  • 1/3 cup cooked lean ground seasoned beef
  • 1/4 cup fat-free shredded cheddar cheese
  • 1/4 avocado, diced (optional but yum + fiber!)
  • 2–3 tbsp pico de gallo (grab some from your fav local Mexican spot for convenience)
  • Salt and pepper to taste

DIRECTIONS:

  • Heat your pan: Medium heat

  • Scramble it up: Whisk together the 2 eggs and egg whites. Pour into the heated pan and cook on medium, gently stirring.

  • Add the beef: Toss in your prepped lean ground beef and let it warm through with the eggs.

  • Cheesy goodness: Sprinkle on the fat-free cheddar and stir until it melts into the scramble.

  • Top it off: Remove from heat and finish with diced avocado, a spoonful of pico de gallo, season with salt, or pepper if desired.
