Buffa-Lo-Carb Chicken Pizza

Game day just got an upgrade! This “Buffa-Lo-Carb Chicken Pizza” is made with ground chicken as the crust (but you’d never know it), packs 21g of protein per slice, and nails that comfort food craving without sidelining your protein goals. It’s on repeat in our house—we just switch up the flavors. Pepperoni, BBQ chicken, Hawaiian… endless excuses to eat pizza every week.

INGREDIENTS:

Crust:

  • 1 lb ground chicken
  • 2 eggs
  • 1 cup grated Parmesan cheese
  • 1/2 tbsp. garlic powder
  • 1 tsp. salt
  • 1 tbsp ranch seasoning (optional, but delicious)

Toppings:

  • 1/4 cup buffalo sauce (adjust to spice preference)
  • 1 cup part skim shredded mozzarella cheese
  • Top with blue cheese crumbles, red onions and green onions 

Protein Ranch:

  • 1/4 cup nonfat Greek yogurt
  • 2 tsp ranch seasoning mix
  • Water as needed to thin to desired consistency

DIRECTIONS:

Prepare the Crust: Preheat oven to 400°F. Line a baking sheet or pizza pan with parchment paper. In a bowl, mix ground chicken, eggs, Parmesan, garlic powder, salt, and ranch seasoning. Spread mixture into a crust shape, about 1/4 to 1/2 inch thick.

Bake the Crust: Bake for 35 minutes, or until firm and slightly golden.

Add Toppings: Spread buffalo sauce over the baked crust. Top with mozzarella, blue cheese, red onions, and green onions.

Broil: Broil for 2–3 minutes until cheese is melted and lightly browned. Watch closely to avoid burning.

Make the Protein Ranch: Mix Greek yogurt with ranch seasoning. Add a small amount of water and stir until smooth and thin enough to drizzle.

Serve: Drizzle with protein ranch. Slice and serve! Serves 2-4.
